Pratyahara

It’s a snowy, blustery day in New England.  We are hunkering down through the storm (it’s a long one, started last night, and is still snowing this evening….).  And since I’ve been studying for my advanced yoga teacher training, at this time I am drawn to the yoga teaching of “Pratyahara” or the withdrawl of the senses, moving us along on the path of enlightenment.  We also withdraw from the world on days like today and keep the external influences at arms length.  It is comforting and nourishing for the soul, and is a regular part of our seasonal flow.

I took the liberty to bake some paleo cookies today for me and the gang (although our kind neighbor delivered some of her own today after the group shoveling effort!).  I thought I would share it because it is such a snap to make and really delicious.

Salted Almond Butter Cookies

  • Servings: 12 cookies
  • Difficulty: super easy!

Paleo Salted Almond Butter Chocolate Chip Cookies
Paleo Salted Almond Butter Chocolate Chip Cookies

Preheat oven to 350 degrees.

Mix together all the ingredients in a small bowl:
3/4 cup almond butter
1/2 cup coconut sugar
1 egg
1/2 teaspoon of baking soda
1/4 teaspoon of salt

Then add:
1/2 cup of Enjoy Life Chocolate Chips (minis)

Drop rounded tablespoons of the batter onto a parchment lined baking sheet.  Flatten with back of a spatula and then sprinkle a little salt on each cookie.

Bake for 12 minutes or until your cookie edges are browned.

Let them cool down a bit (if you have a stone counter, just slide the parchment to the counter to cool them).
